Mom’s Beet Salad
The trick to having a great tasting beet salad is to steam the beets in a small amount of water with the peels on.

4 cups steamed, cooled, peeled, cubed, beets
1 medium red onion sliced
2 large dill pickles diced
1/8 cup extra virgin olive oil
1 Tbs hot horseradish (more or less to taste)
Sea salt (to taste)

Toss, Serve & Enjoy!

Serves 4

Health Tip: This is a great dish if you’re low on iron. Also, a daily Vitamin C supplement to help with absorption.
