Wilted Baby Kale

3 tablespoons avocado oil
2 cloves garlic, chopped (or 1 shallot)
1/4 teaspoon crushed red pepper flakes
1 large bag of organic baby kale (4 cups)
Sea salt
1/4 cup lightly toasted pine nuts or raw pumpkin seeds
Fresh lemon

Heat a large skillet over high heat. Add the avocado oil, garlic, and red pepper flakes. Cook stirring often with a wooden spoon until fragrant and toasted, about 1 minute. Turn off the heat and add the baby kale and sea salt to taste. Toss well to coat and slightly wilt the baby kale, then add to salad bowl. Toss with the pine nuts or pumpkin seeds and a squeeze of fresh lemon. Serve and Enjoy!
